We want to show you our favourite winter recipes using Irish Cream Liqueur, a Christmas Staple in many Irish households. We will break down our top three and a delicious recipe to accompany each one.

An affogato is a delectable Italian coffee dessert made by pouring hot espresso over creamy gelato with a splash of liqueur. This sweet treat makes for a quick, easy and delicious dessert. Ideal for a dinner party this Christmas season and is sure to be a great hit with your guests.
An Irish Affogato
For this recipe, you will need espresso, vanilla ice cream, Two Stacks Double Irish Cream Liqueur, toppings of your choice.
- Brew hot espresso using your coffee machine of choice. The Nespresso shots are a great way to get a quick espresso at home. We do not recommend using instant coffee as it is too watery.
- Scoop high quality vanilla ice cream into a glass. We recommend using high quality Irish ice cream or gelato. Here are some delicious recommendations. Vanilla is also the preferred flavour as it complements both the espresso and the Irish liqueur.
- Pour the hot coffee over the ice cream. Enjoy watching the ice cream swirls melt into the hot espresso.
- Add 35mls of Two Stacks Double Irish Cream Liqueur right on top. If you love your Irish Cream Liqueur, you can do a double shot.
- Serve up and enjoy immediately!
This is a great dessert for the festive season. Like many Italian recipes, the ingredients may be simple but the flavours are big so it’s definitely worth getting the best vanilla ice cream and Irish cream liqueur. You can also add delicious optional extras – including biscotti for dunking, chocolate shavings on top or even a few roughly chopped hazelnuts. St Patrick’s Salted Caramel Irish Cream Liqueur
Irish Cream liqueur is not just made by multiple distilleries around Ireland, but is now available in an array of flavours. These flavours enhance the notes of the Irish Whiskey used to make this delectable drink. A popular flavour in cakes and desserts in recent years has been salted caramel. St. Patrick’s Salted Caramel Irish Cream Liqueur brings this trend to Irish Liqueur. This drink is not just a fad though as it’s been highly awarded, including Best Overall Irish Cream Liqueur at the Irish Whiskey Awards in 2022.

St. Patrick’s Salted Caramel and Biscoff Bon Bons
For this recipe you will need 250g of White Chocolate, 63ml of Heavy Cream, 50ml of St.Patrick’s Salted Caramel Irish Cream Liqueur, 100g of Biscoff Biscuits, and 50g of White Chocolate.
- Crush up 100g of Biscoff Biscuits. Chop them finely with a food processor. Place to the side in a bowl.
- Melt 250g of White Chocolate with 63ml of heavy cream in a sauce pan. Using a double boiler can help you control the temperature.
- Stir in 50ml of St.Patrick’s Salted Caramel Irish Cream Liqueur. Measurements must be accurate so the sweets set.
- Combine the liquid mixture with the crushed biscuits and stir well. Add a lid or cover with cling film and chill in the fridge for at least 4 hours.
- Grate white chocolate just as the cooling time has finished. Place on cold plate.
- Take the mixture out of the fridge and scoop with a teaspoon. Roll the mixture in your hands to form balls.
- Roll the balls in the grated white chocolate immediately afterward. Place in paper cases and serve!

Merrys White Hot Chocolate
For this recipe you will need 200ml of whole milk, 25ml of heavy whipping cream, 1 tablespoon of caster sugar, 30 grams of good quality white chocolate, 1 teaspoon of vanilla extract, pinch of salt, and 50ml of Merrys White Chocolate Irish Cream Liqueur.
- Place all your ingredients except the cream liqueur in a small saucepan on low heat.
- Stir constantly until the chocolate melts and and the ingredients combine.
- Pour the mixture into a a mug of your choice. The more festive, the better
- Add in your Merrys White Chocolate Irish Cream Liqueur.
- Top with your favourite toppings such as marshmallows and whipped cream. From a can is perfect!
- Serve up straight away!
This delightful sweet beverage is a great way to warm up while watching your favourite movie. You can even make it even more festive by adding in peppermint extract. Be careful, the flavour is strong so just a few drops will do!
