A key influence on the flavour of our whiskey comes from the wood it has spent time in. There are countless nuances in how that wood affects and injects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char.
Whiskey making and entrepreneurship has been in the Teeling genes as far back as 1782, when Walter Teeling set up a small craft distillery on Marrowbone Lane, Dublin 8. Right back in the heart of the Liberties district of Dublin city,
Jack and Stephen Teeling, the latest generation of whiskey makers, set up the Teeling Whiskey Company in 2012. In March 2015 they opened the Teeling Whiskey Distillery the first new distillery in Dublin in over 125 years, and just a stone’s throw from their ancestral distillery, right in the heart of the Golden Triangle, the historic distilling district of the city.
With one eye on the past, but looking to the future, Teeling is the new generation of Dublin distillers.

The Dingle Distillery is Ireland's first Independent working distillery, and is a revelation within the industry, proving to be hugely popular among the ever increasing artisan spirits fan base around the world.
Since it's inception in 2012, the distillery has gone from strength to strength and this is proved in the awards its winning across the entire Dingle range, Whiskey, Gin and Vodka.
Having always had quality over quantity at the forefront of their thoughts, they never had any interest in distilling enormous quantities of bland whiskey. They are hugely passionate about flavorsome, well-crafted spirits. That is why the choose to release their whiskey in small batches, giving as much time as possible to perfect each and every bottle.
To achieve the flavors in their whiskey, they use three distinctive, hand-crafted copper pot stills to create the ultimate Irish whiskey. Their distinctive design, incorporating a boil ball, encourages reflux and has much to do with the remarkable smoothness and purity of our spirit.
The third release of Whiskey has proven how popular the Dingle Distillery has become, and we can be sure that this is only the beginning.
Midleton is Irelands largest distillery. Located alongside the original 17th century Old Midleton Distillery, this new complex was built in 1975 when John Power & Son, John Jameson & Son and Cork Distilleries company joined forces. In 2010 a further 200 million Euro was invested to meet the growing demand of their very popular whiskies; Jameson, Green Spot, Tullamore Dew and Midleton Very Rare to name a few.
In 2013, a new Irish Whiskey Academy was opened in the Midleton Distillery Grounds offering a range of one to three-day Irish whiskey appreciation courses and training for Irish whiskey aficionados, journalists and other members of the drinks profession and industry.
In the small village of Bushmills, settled on the banks of the river you'll find the oldest working distillery in Ireland.
A place where family and friends have worked for generations, in a small Northern Irish village that for over 400 years has kept to the philosophy that hand crafting small batches is the way to produce beautifully smooth tasting Irish whiskey.
The Old Bushmills Distillery certainly does have a significant heritage, with King James I granting Sir Thomas Phillips - landowner and Governor of Co. Antrim, Ireland – a license to distill in 1608.
From there, Bushmills has gone through many generations and iterations, but one thing has remained constant, and that is the exquisite tasting Irish Whiskey!
