Double Pot Still

A double pot still is a traditional Irish whiskey production method involving two distillations in copper vessels. On the First Distillation, the fermented wash is heated in the wash still, vaporizing alcohol and condensing it into “low wines,” which have a higher alcohol concentration. For the Second Distillation, the low wines are distilled in the spirit still for further purification, resulting in a refined spirit that ages into whiskey.

This method enhances flavor complexity and produces a smoother, richer spirit with a distinct Irish character.
