Old Carrick Mill Honey Dew Irish Gin

Old Carrick Mill’s inaugural limited edition gin; Honey Dew. Old Carrick Mill have infused their classic gin with honey from their own beehives on site at the distillery. 20kgs of honey went into this small batch of 600 bottles. Old Carrick Mill gin uses a blend of 10 botanicals, infusing the classic juniper, lemon and cassia with a number of unique elements such as pear, cucumber and black tea.

Infusing honey with the original Old Carrick Mill Gin results in an additional touch of rich honey sweetness, as well as a floral note, from the local flora, in particular, wild heather, found in Monaghan’s beautiful rural landscape. Each bottle is individually hand sealed, labelled and numbered out of a small batch of 600 bottles.
