Spike Island sources its rum from one of the finest distilleries in the Caribbean, specifically in Barbados. Upon its arrival in Ireland, the cask strength golden liquid is blended with soft Tipperary spring water, bringing it down to 40% ABV. A unique spice blend is also added by hand, a process that took over two years to perfect. The selected spices undergo toasting, baking, beating, and various combinations before the final blend is approved.
