Hyde No. 10 Banyuls Finish Single Cask

Hyde No. 10 is a Single Cask, single malt finished in a Banyuls Grand Cru red wine cask. Banyuls is a red French sweet dessert wine made using 75% Grenache Gris red grapes from Côte Vermeille in the Pyrénées-Orientales region of France. Banylus grand Cru has to be cask aged in the white oak barrels for at least 30 months before bottling.

Hyde # 11 Peated Irish Whiskey is a limited release whiskey that has been matured in ex-bourbon, first fill, flame charred, white oak casks. Hyde is aged in the temperate climate and rugged landscape of the south west coast of Ireland on the Wild Atlantic Way.
A peated single Malt Irish whiskey which is both sweet and smoky on the palate with flavours of honey, pear and toasted oak, followed by that unmistakably malt flavour, giving way to a full bodied peated Irish whiskey taste experience. Distilled from 100% Malted IRISH barley, non-chill filtered and bottled at 43%.

Hyde No.9 Iberian Cask

Hyde No.9 Iberian Cask is a limited edition single malt from Hibernia Distillers. This single malt is finished for up to 6 months in tawny port casks from the upper Douro Valley of Northern Portugal giving wonderful notes of dried fruits.

Hyde No.8 Stout Cask

Hyde No. 8 Stout Cask finish is a blend of 75% 4 year old single grain, matured in a first fill flame charred bourbon cask and 25% 4 year old Single Malt, matured in a toasted Oloroso sherry cask. This is a collaboration between The Cotton Ball Brewing Company in Mayfield, Cork and Hibernia Distillers (Hyde). The blend is vatted and then transferred into a craft Irish stout infused ex-bourbon Oak cask for 5 to 6 months. The stout was previously aged in the cask for 3 months to infuse flavour before laying down the whiskey.

Hyde Cask Strength 8 Year Old

Hyde whiskey presents single grain Irish whiskey in its purest form with un-paralleled intensity of flavour and texture. The special limited edition Hyde Cask Strength is non-chill filtered and bottled at its natural cask strength of 59% ABV. It’s complex and spicy with sweet American Bourbon notes.

Hyde No.7 President’s Cask

Hyde No.7, Single Malt Irish Whiskey is tripled distilled on a traditional copper pot still, to the very strict Hyde specification, from 100% malted Irish barley, in a single Irish distillery. This Single Malt Irish whiskey was aged for six years in 250 Litre vintage Oloroso ‘Hogshead’ sherry casks from Cadiz in the Andalusia region of South West Spain. Vintage Oloroso Sherry casks are hard to find and very expensive to source but it is Hydes view that they are worth every penny for the complex rich character which they add to the final taste.

Hyde No.6 President’s Reserve

Hyde No.6 is one of the most special limited edition releases yet, which is why it was named the President’s Reserve. Hyde No.6 President’s Reserve is selected from the master distiller’s very special selection of old reserve Irish whiskey casks. It is named 1938 in honour of Irelands very first President, Douglas Hyde, who was inaugurated into office on the 28th of June 1938. Hyde No.6 is created using 18 Year Old Single Malt with 8 Year Old Single Grain which were both originally aged in flame charred American Bourbon barrels. These two carefully chosen vintages are then married together for a further 9 months of ‘finishing’ in Spanish, Vintage, toasted, Oloroso sherry cask Butts.
