Clonakilty Distillery is located in the picturesque West Cork in Ireland. Opened in 2019 by owner Michael Scully and Head Distiller Oisin Mulcahy, this Cork Distillery has quickly become renowned producers of Irish Whiskey and Gin. The distillery can be found on the Wild Atlantic Way, which provides a breathtaking backdrop to their operations.
For me a good whisky is a balance. Balance between sweetness and tannin, but also a balance between conventional and polarising flavours. I want a whisky to be just on the verge of polarising to make it interesting while hitting all the conventional markers which make whisky approachable.
They prides themselves on using traditional methods to craft their whiskey, while using only the best of local ingredients. A unique aspect to their whiskey production is their use of barley grown on the family farm, a farm which has been in the Scully Family for over eight generations. Their commitment to local sourcing ensures sustainability and a high quality product.
Clonakilty Distillery’s Portfolio
Their portfolio of Irish Whiskies include a Single Malt, a Single Pot Still, exiting collaborations, and many more. Their whiskeys are aged in a range of different casks, such a ex-bourbon, sherry and even port casks. Each barrel affects the distinctive flavours and complexities of the final products.
They are also known for their Minke Irish Gin. Made with botanicals inspired by the local coastal environment, this gin was award “Best Classic Irish Gin” at the World Gin Awards in 2023. It has been praised for it’s unique flavour profile and it’s use of local ingredients, including Rock Samphire, which is picked by hand and only in season!
