The Dingle Distillery was founded in the winter of 2012, just as the island of Ireland was coming out of a tumultuous recession. It is an independent family-owned business. From the outset, Dingle Distillery had no interest in the idea of mass producing whiskey for themselves or anyone else for that matter. They are hugely passionate about flavoursome, hand-crafted spirits. Dingle Whiskey is a product of its environment. From the localised well water to the immensely manual mashing, alongside the wooden fermentation vessels that feed into the three bespoke copper pot stills, the production is purely Dingle. The Wild Atlantic Way microclimate has created a maturation like no other, manipulating the course of the whiskey.
