ThomondGate Hlymrekr Saga – Danish Rye Cask SPS

Introducing the Limited Edition Hlymrekr Saga Bottling, a nod to the Danish Vikings’ role in Limerick’s history. This special offering is limited to just 270 bottles.

The journey of each bottle begins with Cask No. HS-003, chosen for its fine American oak. Prepared with care, the cask was kiln-dried and flame-charred, enhancing the oak’s natural essence and the distinct touch of the charcoal. Initially, it was seasoned with high-quality Barbados Rum, adding a lush Caribbean flair of molasses and tropical fruits.

Next, at Denmark’s Stauning Distillery, the cask was filled with their signature Rye new-make whisky. Crafted in traditional pot stills from local barley and rye, this whisky adds a warm and spiced profile, complete with notes of chocolate sauce, dried apricot, orange chocolate, fig, and waxy honey.

Finally, on May 23, 2022, the cask welcomed the anticipated Single Pot Still Whiskey, aged in ex-Bourbon American Oak Casks since August 16, 2018. After maturing for 5 years and 7 months, and then finishing in the Danish rye cask for 1 year and 10 months, this whiskey boasts a complex blend of flavours and aromas. Bottled at a cask strength of 59.41% ABV, it’s truly a captivating experience.
